Recipe: Port Wine Reduction
Deliciously sweet and rich, this Port wine reduction recipe is a classic and easy sauce recipe, superb served with roast meats such as beef or duck.
- 2 tbspolive oil
- 1 large onion, sliced
- 2 clovesgarlic, crushed
- 100ml/3½fl ozvegetable stock
- 200ml/7¼fl ozred wine
- Good slug of Port (Fine Ruby or Select Reserve)
- 25g/1oz cold butter, cubed
Heat the oil in a pan and cook the onion and garlic with seasoning until soft. Add the stock and reduce down to nearly nothing.
Add the wine and Port and reduce by at least half. Just before serving, whisk in the butter to give it a really great shine.
